Use only manufacturer-approved descaling tablets or solutions. Generic descalers can void the warranty and damage stainless steel boiler surfaces over time.
Inspect the door gasket monthly. Look for cracking, hardening, compression deformation, or areas where the gasket has pulled away from the door frame. A failing door seal allows steam to escape, reduces cooking efficiency, and creates a burn hazard for kitchen staff. Gasket replacement is a low-cost repair that prevents the much more expensive consequence of a burned door frame or warped door panel.
Most combi ovens have an air intake filter on the rear or side panel. In commercial kitchen environments, this filter collects grease and dust rapidly. A clogged filter restricts airflow to the cooling system, causing the control board and electrical components to overheat. Clean or replace the air filter every 4–8 weeks depending on kitchen volume.
