My commercial oven won't heat past 250 degrees, what causes this?
Partial heating in gas ovens usually indicates a failing thermostat, weak gas valve, or incorrect orifice pressure. We test manifold pressure with a manometer (should read 4 inches water column for natural gas, 10 inches for LP). Electric ovens heating slowly often have one burnt-out heating element or a degraded contactor. On Vulcan convection ovens, code ER-3 points to thermostat failure.
